A Brunch to Impress

When you've got friends or family to stay, you want to impress them at meal times - and that includes brunch too.

Weekend breakfasts don't have to be unhealthy - and can be quick to prepare too so you don't have to spend too long in the kitchen.

It’s easy to prepare healthy, tasty brunches by switching up your cooking methods – poach or scramble eggs, grill bacon and veggies and toast bread.

  • Wholegrain Toast Topped with Sliced Ripe Avocado

    Wholegrain Bread, Fruit, Vegetables, Eggs

    Serve wholegrain toast with ripe avocado, a poached egg and grilled cherry tomatoes and mushrooms. This colourful dish is sure to impress any visitors.

  • Smoked Salmon & Veggie Omelette

    Oily Fish, Vegetables, Eggs

    Heat a non-stick pan & add rapeseed oil before lightly frying one sliced pepper & one chopped onion until soft. Add 100g sliced beans or sugar snap peas to the pan. Beat together three eggs with 3 tbsp skimmed milk and pour all over the vegetables, season with salt & pepper.

    Heat the omelette for a few minutes until you can see the edges cooking, then add 40g smoked salmon and pop the omelette under the grill for a couple of minutes until golden brown/to your liking.

    Smoked Salmon & Veggie Omelette is an impressive breakfast that isn’t expensive but tastes great. Salmon will give you added protein and omega 3 for heart health.

  • Healthy Full Breakfast

    Wholegrain Bread, Beans, Eggs, vegetables

    Everyone loves a cooked breakfast – make sure to use grilled lean bacon served with beans, scrambled eggs, tomatoes, mushrooms and wholegrain bread. If you are catering for vegetarians then a poached egg and sliced beef tomato sandwich will fit the bill.
